Sushi (すし, 寿司, 鮨?) is the Japanese preparation and serving of specially prepared vinegared rice (鮨飯 sushi-meshi) combined with varied ingredients (ネタ neta) such as chiefly seafood (often uncooked), vegetables, and occasionally tropical fruits. Styles of sushi and its presentation vary widely, but the key ingredient in all cases is the sushi rice, also referred to as shari (しゃり), or sumeshi (酢飯).
Sushi can be prepared with either brown or white rice. It is often prepared with raw seafood, but some common varieties of sushi use cooked ingredients, and many other sorts are vegetarian. Sushi is often served with pickled ginger, wasabi, and soy sauce. Daikon radish is popular as a garnish.
Sushi is often confused with sashimi, a related Japanese dish consisting of thinly sliced raw meat or fish and an optional serving of rice. Sashimi is served as slices, unlike sushi, which is served as rolls.

Nigiri :
A topping, usually fish, served on top of sushi rice
Not all nigiri is raw, though this dish is best for people who want to appreciate the flavor of the fish, shellfish, or other toppings
Sashimi:
Fish or shellfish served alone (no rice)
This is best for people who really love to taste the fish or shellfish since it comes with nothing else
Maki:
Rice and filling wrapped in seaweed
This is what most people think of when they think of sushi rolls
Uramaki:
Similar to the above, but rice is on the outside and seaweed wraps around the filling
These rolls often have lots of toppings and sauces — they may either be cooked or raw
Temaki:
Sushi that has been hand-rolled into a cone shape
The cones are not as easy to share as the rolls (though very delicious!)

Why would be the sushi become popular in foreign country?
In the 1960s. Many Japanese businessmen from Toyota, Nissan, etc. started coming in, and they brought their American colleagues. Several of their American friends loved sushi and they introduced more Americans to the restaurant. That’s how it grew and how the first sushi bar started in the U.S. After four years, Chef Saito, a middle-aged man, had made a small fortune so he took it back to Tokyo and opened a sushi bar in the middle of Ginza. Needless to say, he was an instant celebrity, as in those days sushi chefs normally had to apprentice until they were in their sixties before running their own shop.

2. Yoshitake (よしたけ) [Ginza]
Yoshitake with 7 counter seats is an intimate place to enjoy your meal. What they serve here is a set menu, omakase, of appetizers and sushi for about 25,000 yen. In addition to fresh and carefully prepared delicious sushi, welcoming atmosphere of both the owner chef and his apprentices would deliver you a perfect meal. It is open only at dinner time and reservation is required to dine at this Michelin-3-star restaurant.

3.Sawada (さわ田) [Ginza]
Sawada is a small family-run restaurant with 6 counter-seats. The atmosphere is relaxing. The unique owner chef used to work in the transportation industry. Though only omakase, chef’s choice set menu, is available, don’t worry as he will ask your preferences in advance. You might feel odd after you put your order as he speaks rarely while he prepares dishes. Otherwise, he and his wife are very nice to support you so that you can enjoy your meal. Reservation is required to dine at this Michelin 2-stars restaurant.
